Red Lentil Soup
1 tblsp olive oil
2 cloves garlic
2 onions chopped
2 celery stalks
1 large carrot
375 grams red lentils- washed
2 lt vegie stock
1 tspn dried thyme
1 tspn ground cumin
S + P
juice 1/2 lemon
Gently saute carrot,onion,celery,garlic + cumin in oil till softish. Add thyme,
lemon juice, stock, S+P. MIx well and boil. Cook approx 1/2 hour then add
lentils. Cook 30 mins more.
Blend.
Serve with natural yoghurt if desired.
